Preheat the oven to 325 degrees Fahrenheit.

Place the roast, with the fat facing up, on a roasting rack in a shallow roasting pan.

Slide an ovenproof meat thermometer into the thickest part of the rump roast.

Place the pan on the middle rack in the preheated oven.

Cook the roast for 1 hour and 40 minutes or about 25 minutes per pound. The meat is done to medium-rare when the thermometer reads at least 135 degrees F. Cook to around 145 degrees F for medium and 155 degrees F for medium-well done.

Remove roast from oven and let rest for 20 minutes under aluminum foil before slicing.
