How to Keep Parmesan Fresh
- 1). Set your fridge to 35 to 42 degrees for optimal cheese storage temperature.
- 2). Remove the Parmesan from the plastic wrap it came in from the market. This plastic wrap will suffocate the natural living enzymes in the cheese.
- 3). Wrap the Parmesan in wax or parchment paper. It does not have to be tight.
- 4). Wrap the bundle in plastic or foil wrap. This step will prevent the moisture from escaping the cheese.
