How to Prepare a Whole Filet Mignon Tenderloin Roast
- 1). Bring the filet mignon roast to room temperature before cooking. Preheat the oven to 475 degrees. You want to cook it as quickly as possible to keep the juices trapped inside the meat.
- 2). Place the roast fat side up in a large roasting pan. Rub generously with olive oil and season with salt and pepper. You may also want to season with 1 tbsp. of thyme, tarragon, garlic, bay, basil or marjoram.
- 3). Put the meat the oven. It should cook 15 minutes for a 3 lb. roast or 20 minutes for a 5 lb. roast. Reduce the heat to 350 degrees and cook an additional 20 to 25 minutes. Insert a meat thermometer into the center of the roast to determine when it is done to your taste --125 degrees for rare, 135 degrees for medium.
- 4). Remove the roast from the oven and cover it with aluminum foil. Let the meat stand for 15 minutes so the juices "set" in the roast before slicing.
- 5). Serve with the juices from the pan or the sauce of your choice. Do not choose a sauce with an overpowering flavor as it will disguise the flavor of the filet.
