- The increased humidity in a crisper -- as compared to the rest of the refrigerator -- allows fruits and vegetables to stay fresh for a longer period than if they were exposed to drier air. The amount of humidity needed varies, depending on the specific fruit or vegetable. Too much humidity and the food will begin to mold. Too little and it will dry out. Because each food is different, many crispers are adjustable -- you can increase or decrease the humidity by sliding a lever that allows more or less cold air to enter the space. In general, the more water the fruit or vegetable contains, the higher the humidity it requires to stay fresh.
